What is structured water? A short definition

Structured water is water whose molecules are arranged in an ordered, cluster-like pattern – the natural state water holds when it springs out of the ground or sits inside fruit and vegetables. The new discoveries about the nature of water show that this structure is much more important than its chemical composition. How water molecules cluster

To see what “structuring” means, start with a single molecule. The familiar formula H2O tells us water is one atom of oxygen bonded to two atoms of hydrogen:

• A hydrogen atom has a positively charged core with negatively charged electrons in orbit (called electron shells) around it.
• An oxygen atom likewise has a positive core, but with three orbits holding 8 negatively charged electrons.
• Oxygen’s outer orbit can attract two more electrons – one from each of the two hydrogen atoms.
• That sharing establishes the bond (called hydrogen bonding) between the atoms, and the H2O molecule is born.

Why the water molecule behaves like a tiny magnet

After that exchange, the hydrogen atoms end up with no electrons in their orbit and a consequent (+) charge, whereas the oxygen atom, after receiving electrons, ends up with two (-) charges. This gives the whole molecule a polar nature – a dipole, like a little magnet. Because opposite charges attract, water molecules pull on one another and on other polar molecules.

From clusters to “liquid crystalline” water

Through the collective activity of these hydrogen bonds, water molecules gather into clusters. In nature the clusters can obtain a very regular, crystal-like shape – a state that is both solid and liquid at the same time, called liquid crystalline water or structured water.

Structured vs ordinary tap water

The difference is not in the chemistry – tap water and spring water are both H2O – but in the order:

• Natural, structured water – spring water, and the water inside fresh fruit and vegetables (when no chemicals are added) – is clean, fresh, naturally energized and structured.
• Processed tap water – after travelling through pipes and chemical treatment – loses most of these qualities, and its structure is changed into something different.
